I traveled along the historic Canal du Midi during the late spring, when trees where in blossom, fresh asparagus was in season, and the vineyards that dot the landscape were coming out of their winter slumber.  Occitaine is a fantastic destination for food and wine conoisseurs - seafood and spices characterize the region's cuisine, farmers markets abound, and Languedoc-Roussillon wines offer a great value.  Don't miss Narbonne's famous market, a highlight of many hotel barge cruises in the area.

On one excursion, our wine tasting and vineyard tour was personally hosted by the owner - a fourth-generation winemaker.  On another excursion, we visited the hillside village of Minerve, deep in Cathar Country.  The history and remoteness of the area were unlike anything I had ever experienced.  We also had the chance to swim in the ocean, bike along the canal, and just relax on deck and savor the atmosphere.
